
One-Pot Meal: Classic Cioppino (Italian Seafood Stew) + 9 Amazing One-Pot Dinners From Dietitians

Seafood and tomatoes is a match made in heaven and this hearty Italian stew is divine. My Italian husband shared his one-pot recipe perfect for a regular evening night or a fancy party. Enjoy the Classic Cioppino (Italian Seafood Stew) with some crusty bread and you have a complete meal in one pot.
Ingredients:
1 Tablespoon olive oil
1 medium onion, peeled and chopped
3 large shallots, peeled and chopped
1 medium fennel bulb, trimmed and chopped
4 garlic cloves, peeled and minced
1 teaspoon red pepper flakes
Salt & Pepper to taste
8 ounce can of tomato paste
1 (28-ounce) can of diced tomatoes in juice
1 ½ cups dry white wine
5 cups chicken stock or fish stock (I use chicken stock because it’s easier to find)
2 bay leaves
1 pound clams, scrubbed
1 pound mussels, scrubbed and debearded
1 pound large shrimp, peeled and deveined (you can leave the tail on)
1 pound fish like cod, halibut, or salmon, cut into 2-inch chunks
Italian flat leaf, chopped (optional)
Parmesan cheese, shredded (optional)
Directions:
Heat the oil in a large pot over medium heat. Add the onion, shallots, fennel, and garlic to the pot. Cover and cook for 10 minutes, stirring occasionally. Add the red pepper flakes, salt, and pepper. Stir in the tomato paste. Add the diced tomatoes, wine, stock, and bay leaves. Cover and bring to a simmer for 25 minutes. Add the clams and mussels. Cook for another 5 minutes. Add the shrimp and fish and cook for 5 minutes longer, stirring gently. Discard any clams and mussels that did not open. Season the soup with more salt to taste. Serve. Sprinkle with parsley and cheese if desired.
Yield: 6 servings (serving size: 2 cups)
